How to make
The water is heated to 100°F (37°C) - body temperature. Dissolve and mix honey, yeast and butter in it.
The flour is sifted into a bowl along with the salt and a well is formed into which the liquid mixture is poured.
Knead a smooth elastic dough with prolonged kneading - at least 10 minutes. Sprinkle flour a little at a time until it stops sticking.
The dough is formed into a ball, lightly greased and returned to the bowl. Cover it with a towel and leave it for 1 hour in a warm room.
After it rises and doubles in volume, it is divided into 8 equal parts. Each of them is formed into a strip in the following way:
On a lightly greased surface, pull/stretch the ball of dough, with one hand by pressing down on one end, while the other works in an up-and-down motion while pulling and stretching the dough until it forms a strip.
Two by two the strips are wrapped around each other and their ends are joined.
The resulting shaped pretzels are arranged at a distance in a tray covered with baking paper. Leave them to rise for another 1 hour or until they have risen well.
The oven is heated to 390°F (200°C). The sesame seed pretzels are spread with egg yolk beaten with a little water and oil, sprinkle with sesame seeds and bake for 18-20 minutes or until golden brown.
