How to make
Wash the nettles well in several waters, scald them briefly by pouring hot water over them, strain them well and finely chop them.
Cut the onions and garlic, mushrooms, pepper and grate the carrot, fry in a little oil and butter, add paprika, the chopped tomatoes and washed rice.
Pour warm water and boil until the rice is semi-cooked, finally add the nettles and when the dish is ready - the chopped parsley.
Serve with thick yogurt, chopped parsley and spring onions, a sprig of fresh garlic and crumbled white cheese! Enjoy!
If you don't want the nettles with rice to be like a stew, the dish can also be made with a topping of yogurt and eggs, like vegan moussaka!
