"Fresh and very tasty spring quiche, suitable for an appetizer or a light main course"

Ingredients

  • for the base
  • flour - 10.5 oz (300 g)
  • butter - 5.3 oz (150 g)
  • salt - 1 tsp.
  • ice cold water - 3 tbsp.
  • for the stuffing
  • cooking cream - 2/3 cup (150 ml)
  • eggs - 2 pcs.
  • nutmeg - 2 pinches
  • prosciutto or ham - 5.3 oz (150 g)
  • fresh thyme
  • zucchini - 1 pc.
  • cherry tomatoes - 7 - 8 pcs.
  • mozzarella - 4.4 oz (125 g)

How to make

Mix the flour, butter, 1/2 tsp. salt and 3 tbsp. ice-cold water into a dough. Knead briefly to make it crumbly and crispy.

You can put all the ingredients in a blender and blend until a ball forms. The water must be cold to make the butter pastry dough.

The finished dough is wrapped in foil and left to cool for at least 30 minutes.

Meanwhile, fry the diced zucchini. When it acquires a golden color, remove it from the heat and season with a little thyme.

The dough is rolled out on a floured surface and transferred into a tart tin. The edges are cut, the dough is pierced with a fork and baked for about 10 minutes.

Beat the eggs and cream.

Assemble the quiche by placing the zucchini on the base, pour the liquid mixture on top and arrange the finely chopped mozzarella, chopped ham and cherry tomatoes on top of it.

Bake the savory pie for about 25-30 minutes. Serve it slightly warm.
