How to make
Boil the cauliflower florets or steam them, so that they don't absorb excess water. The cauliflower should not be overcooked!
Set aside three florets and grind the rest of the vegetable in a blender.
Add the eggs, milk, lemon juice, oil, almond and coconut flour and the salt and husk fibers.
Blend again in the blender, until a homogeneous mixture is obtained.
Finally, add some oat flour with the baking powder and blend again. Add as much oat flour as needed until you have a batter thicker than sponge cake batter, but not too thick.
If you have used too much flour, you can always add a little water from the cauliflower.
Pour the healthy bread batter into a rectangular bread tin lined with parchment paper. It is best that it has a capacity of 1.5 l and that the bread does not become too tall, but thinner, so that it bakes well.
Smooth it with a spatula and place the cauliflower florets on top. Drizzle with a little olive oil and bake at 360°F (180°C) for about 40 minutes or until golden brown.
Carefully remove it from the tin and cool it on a wire rack. The bread for diabetes is very soft so you can take it out with the paper.
It's very juicy on the inside because of the cauliflower, which is understandable and it's great because it melts in your mouth.
Serve it with good white cheese or various spreads.
