How to make
Dissolve the yeast, 2 tbsp. flour and sugar in 2/5 cup (100 ml) of water, slightly warmed. Let it activate for about 5-7 minutes.
Sift the flour into a bowl. If you don't have spelt flour, put in the same amount of white flour. Usually, we add spelt for a nicer color and texture, but you can do without it.
As soon as the yeast activates, pour it into the flour along with the remaining water, yogurt and salt. Mix well, until all ingredients are homogenized and combined. The dough should be soft and sticky, it should not be kneaded, but mixed with a wooden or metal spoon. If it is hard, add a little more water, if it is too liquid, add a little flour.
Using a spatula, scrape the dough directly into the baking pan - rectangular, standard cake tin or similar. It should be covered with baking paper. Wet the spatula and smooth the surface, then brush with a little oil to prevent it from forming a crust.
Cover it with a towel, so that it does not touch the dough and there is space because it will rise a lot. Leave it in a warm place for about 1 hour or until it has tripled in size. For me, it even comes out of the mold a little.
Bake at 360°F (180°C) in a preheated oven for about 30 minutes. At the very end of baking, you can open the oven and spray water on the sides, this will generate steam, which will form a crispy crust and a soft and fluffy interior.
Let the bread cool on a wire rack before slicing it.
