Ingredients

  • For the oat milk
  • oats - 1/2 cup
  • water - 2 cups cold (250ml each)
  • For the brownies
  • brown flour - 1 cup
  • corn flour - 1 cup fine
  • cocoa powder - 1/3 tsp. to dust
  • brown crystal sugar - 1 and 1/2 cup
  • vanilla - 2 powders (0.2 g each) or essence
  • soda - 1 tsp. equal
  • himalayan salt - 1 pinch
  • sunflower oil - 1/3 cup
  • oat milk - 1 and 1/2 cup strained (homemade)
  • For the topping
  • cocoa powder - 3 tbsp.
  • brown crystal sugar - 6 tbsp.
  • water - 6 tbsp.
  • vanilla - 1 powder (0.2 g) or essence
  • walnuts - 3 tbsp. crushed
  • dates - 6 pcs. fresh
  • oat pulp - strained from the milk

How to make

Easy recipe for vegan brownies:

The tea cup, which we use to measure the amount of products has a capacity of 8.5 fl oz (250 ml) of water.

First, prepare the homemade oat milk by soaking the fine oats in cold water in a deep vessel / jug. The ratio is 1:4.

After 10-15 minutes, grind with a liquidizer (or in a blender) and strain the nut milk through a large fine strainer. Save the strained oat pulp for later, as we will use it in the topping.

We have to make the brownie mixture, and for this purpose in a deep bowl, mix the dry ingredients first - plain flour, fine corn flour, cocoa powder, vanilla powder, brown granulated sugar, soda and fine Himalayan salt.

Stir to combine them. We begin to gradually and slowly pour the homemade oat milk, by constantly stirring and rubbing it into the walls, so that lumps do not form. Then we add unrefined sunflower oil.

We spread the homogeneous mixture in a rectangular baking pan with dimensions of about 12″ (30 cm) by 8″ (20 cm) and a height of 2″ (5 cm).

Bake for about 5 minutes at 390°F (200°C) and then bake at 360°F (180°C) for another 20 minutes, until a fluffy and moist brownie with a light crust on top is obtained. It is important not to bake it for too long, because the height may drop from baking it too long. It is also good to turn the baking pan from time to time, so that it bakes evenly. Take it out and leave it to cool.

During this time we prepare the chocolate topping. In a metal pot - mix the cocoa with vanilla and brown sugar and crystal sugar and mix them with a little water. Put it on the stove and stir often. As soon as it boils, boil for 1-2 minutes and remove it from the heat.

In a granite (or marble) mortar, grind the crushed raw walnuts along with fresh dates (peeled) into a fine sticky mixture. Add the ground nuts and dates to the cocoa mixture, add the oat pulp (strained from the oat milk) and mix everything together.

A sweet cocoa topping with pleasant nut particles is obtained.

Cut the cooled homemade brownie into square pieces and serve it, sprinkled with a little topping on top.
