Finely chop the onion and pour it into the bowl, in which you will beat the caviar. Add the caviar, along with a little carbonated water, bread, using only the middle without the crusts and soak it in the carbonated water and a little oil, so that it can be beaten with a liquidizer.
Beat very well and then add a little of the rest of the bread, oil and carbonated water and add the citric acid.
There is no salt in the recipe for this spread, because my caviar is very salty as it is preserved with salt. If yours is unsalted, you can add as much salt as you like.
Cut the baguette into slices, which are baked lightly in the oven for 10 minutes and served together with caviar and olives. The decoration for the tarama caviar is a matter of imagination.
