How to make
The caviar, onion and breadcrumbs are blended, until a homogeneous mixture is obtained. Then add 2 tbsp. oil and beat with a mixer. When the oil is absorbed, add another 2 tbsp. and so on until the oil runs out.
The caviar will swell from the oil and double and triple in size. Finally, lemon juice is added to make the caviar white. Beat some more with a mixer and serve it with toast.
Note: If during the beating, the caviar thins out and becomes too runny (because you added more oil at once), add 1 cup of boiling water and keep beating, until the spread sets!
