"Great muffins with a filling of aromatic apple jam"

Ingredients

  • eggs - 2 pcs.
  • skyr - 3.5 oz (100 g)
  • peanut flour - 1.1 oz (30 g) or ground peanuts
  • spelt flour - 0.7 oz (20 g)
  • peanut butter - 0.9 oz (25 g)
  • milk - 3 1/3 tbsp (50 ml) nut or cow's
  • cinnamon
  • stevia - by taste (another sweetener)
  • baking powder - 1 tsp.
  • apple jam - 65 g (for filling)
  • peanuts - for decoration

How to make

Beat the eggs in a bowl, add the rest of the ingredients without the jam and peanuts and mix well.

Pour the mixture halfway into muffin tins, put 1 tsp. of the jam in each mold and add the rest of the mixture.

Sprinkle with pieces of peanuts and bake the muffins in a preheated oven at 390°F (200°C), until they're done.
