For this healthy dessert the apples are cleaned from the seeds and they are grated on a fine grater. They are placed in a bowl along with the juice, which has been released.
The carrot is also cleaned and grated. It is added to the apples.
In a bowl, beat the eggs with a fork, add the erythritol.
Add the grated apples and carrot. Add the dry ingredients, cinnamon, baking powder and oats.
Everything is mixed into a homogeneous mixture and it is left for ten minutes in the bowl.
Meanwhile, prepare the sponge cake tin, by lining baking paper and pouring the mixture in it.
Sprinkle the chopped walnuts on top and press them lightly into the mixture for our healthy sponge cake.
The apple sponge cake is baked in a preheated oven at 340°F (170°C) for 35 minutes.
