How to make
Beat the eggs in a deep bowl. Add the milk and mix again. Sift the flour and half a teaspoon of baking soda. Stir the mixture well, until a thick paste is obtained.
Halve the vanilla pod and add the seeds to the breading.
Heat oil for frying in a deep pot on the stove. Peel the bananas and cut them in half.
Dip them in the breading and drop them into the heated oil. Fry, until they aquire a golden color and transfer them onto kitchen paper to drain excess oil.
Crush a handful of pistachios in a mortar. Arrange the breaded bananas into a serving plate and garnish with morello cherry jam or cherries and sour cream.
Finally, sprinkle the breaded bananas with pistachios and serve them.
