How to make
Peel and clean the shrimp. If you use frozen ones, defrost them in advance.
Prepare the salsa for the Fajitas, by peeling and chopping the avocado, tomato, onion and garlic. Put them in a blender along with the cleaned jalapeño pepper and the fresh parsley and cilantro leaves.
Run the appliance on medium speed or chopping function for a few seconds.
Of course, you can chop all this by hand. Strain the products well from the separated liquids and mix them with the strained yogurt, olive oil, lime juice and salt.
Cut the iceberg into thin strips.
It's the shrimp's turn. Put them to sear very quickly on high heat in a pan with olive oil. When the pan seared shrimp are almost ready (takes about 2 minutes), immediately sprinkle them with the fajita spice mix and sprinkle with a little water to prevent burning on the bottom. Stir briefly and remove them from the heat.
Finally, bake the tortillas in a non greased pan. They just need to warm up and aquire a pleasant color.
Put a strip of the sauce in the middle of each wrap, cover with the sliced iceberg, pour the sauce again and finally arrange the shrimp in a row.
Wrap the delicious Shrimp Fajitas and serve them.
