How to make
Chop the onion and green pepper and fry them, until they soften in the oil heated over medium heat. Add the bay leaves, salt and black pepper.
Grate and add the tomato along with the tomato paste. When I use one, I don't add paprika, because the dish is colored enough even without it. Cook for a few minutes and pour about 1300 ml of water (in the process of cooking, top up, if necessary).
While you wait for it to boil, work on the rest of the vegetables.
Peel the potatoes and cut them into large pieces and clean the artichokes from the outer tough leaves and hairs inside if any. Cut them it into quarters.
Put the artichoke in the boiling broth first and after 5-6 minutes, the potatoes. Season with more salt and black pepper. Boil, until the vegetables are ready - about 18-20 minutes.
Serve the stew hot, sprinkled with crushed, dried red pepper (or hot pepper) and freshly chopped parsley.
The lean stew with artichokes and potatoes is ready.
