  • potatoes - 4 pcs. (large)
  • salt
  • black pepper
  • parasol mushrooms - 9 oz (250 g)
  • fresh parsley (for sprinkling)
  • red peppers - 1 pc. (large)
  • oil - 6 tbsp.

How to make

Clean the mushrooms, by removing the stems and peeling the caps. Finely chop the pepper and onion. Boil the potatoes briefly in salted water.

Fry the pepper and onion in a deep pan, then add the mushrooms. Season with black pepper and salt. The stuffing for the vegan potatoes is ready.

Cut each potato in half and scoop out the core with a spoon, by saving it for mashed potatoes or something else.

Fill the potato boats with the stuffing and arrange them in a suitable tray. Add salt.

Bake the appetizing stuffed potatoes for 20 minutes at 370°F (190°C).
