Ingredients

  • flour - 1.1 lb (500 g)
  • eggs - 2 pcs.
  • fresh yeast - 0.7 oz (20 g)
  • milk - 1 cup (250 ml)
  • sugar - 1 tbsp.
  • salt - 1 level top tbsp.
  • olive oil - 3 tbsp. + for spreading
  • sesame seeds - for sprinkling

  • minced meat - 1 lb (450 g) beef/pork mixture
  • black pepper - by taste
  • nutmeg - 1 tbsp. or by taste
  • garlic - 1 tsp. powder
  • salt
  • pickles - 1 jar (from 1 L)
  • tomatoes - 2 pcs.
  • yellow cheese - 9 oz (250 g)
  • parmesan - 2.8 oz (80 g)
  • onion - 1 large onion
  • eggs - 6 pcs. (optional)

How to make

Prepare the buns for the burgers by activating the yeast beforehand in the slightly warmed milk with a spoonful of sugar.

Sift the flour into a bowl and make a well in which you can pour the olive oil, half the salt, the activated yeast and beat one egg plus the egg white of the second one. Save the yolk for spreading at the end.

Knead the dough, which you then transfer onto a floured surface and work with it until it is smooth and elastic (at least 7-8 minutes). In the process of kneading, add the rest of the salt a little at a time. Hit the dough on the kitchen counter 50 times to activate the gluten in it even better.

Shape it into a ball and spread it with olive oil. Leave it to rise in a warm place for 30-40 minutes.

Knead again briefly and divide it into 6 equal parts - balls of approximately 3.4 oz (95 g) each. Shape each into a round bun and place them in a tray onto baking paper. They are left to rise again for 30-40 minutes, but necessarily in a warm place.

Heat the oven to 390°F (200°C) - upper and lower resistor wire on without a fan. Brush the surface of the bread buns with the yolk beaten with a little water and salt. It is good to do this with a silicone brush, without pressing, so that the puffy bread buns do not flatten. Sprinkle with sesame seeds.

Put them in the heated oven and immediately reduce the temperature to 360°F (180°C). Bake for 25 minutes and after removing, wait 1-2 minutes and transfer the bread buns onto a wire rack to cool.

During this time, we mix the minced meat with nutmeg, black pepper, garlic powder and salt. Do not spare the nutmeg, it will be our main flavoring of the meat and adds it a wonderful aroma. Form 6 flat, thin meat schnitzels of about one centimeter.

Cut the onion into crescents, the tomatoes into circles and the pickles into thin strips. Grate the cheese and cut the parmesan into thin flakes.

Fry the onion in a pan with a few drops of fat, until a dark golden color is obtained. In the same pan, sprinkle a little more fat and cook the meat evenly on both sides.

Cut the bread buns in half and arrange the filling, by layering onions, tomatoes, pickles, parmesan flakes, meat and cheese. If desired, also add one poached egg in each burger. Sauce lovers can also add ketchup, mayonnaise, garlic sauce or barbecue sauce.
