How to make
In two separate pots, pour lightly salted water and boil it.
In one pot boil the potatoes and in the other the chicken fillet. Once they are ready and cooked, take them out to cool.
Cut the meat into small pieces. Peel the potatoes and mash them with a fork. Add the grated cheese and the chicken to them. Season with as much salt and black pepper as you like.
Also add the eggs, flour and finely chopped parsley. Stir the mixture. All products must be mixed well. Put them in the fridge for an hour.
With slightly moistened hands, shape the croquettes.
Heat a pan with oil for frying.
Roll the shaped croquettes first in the beaten eggs, then carefully place them in the pan with fat.
Fry the chicken and potato croquettes, until they aquire a golden color on all sides.
