Ingredients

  • oil - 60 ml
  • leeks - 1 stalk
  • garlic - 3 cloves
  • carrots - 3 medium - sized carrots
  • potatoes - 2 pcs.
  • pumpkin - 1.1 lb (500 g)
  • ginger
  • salt
  • black pepper
  • nutmeg
  • turmeric
  • parsley
  • cooking cream - 4/5 cup (200 ml)
  • roasted pumpkin seeds - 1.1 oz (30 g)

How to make

Pour the oil and the finely chopped leeks, onions and garlic into a suitable pot and fry them for a few minutes.

Add the grated carrots and ginger. Leave them for a few minutes, until they are stewed.

The pumpkin and potatoes are peeled and diced, washed and added to the other products in the pot.

Pour hot water, about 8 cups (2 L). Leave it for 10-15 minutes on medium heat.

The pumpkin cream soup is seasoned with the spices and left to boil, until it's fully cooked.

Pour the cooking cream and sprinkle with parsley.
