How to make
The cauliflower is cut into pieces and placed in a large pot of boiling water. Blanch them for five minutes, then strain and set them aside.
Fry the bacon in a large, deep pan over medium heat. Once it is ready, remove it with a slotted spoon and keep the fat from it.
Add olive oil, finely chopped onion and garlic into the pan with the fat. Stew for five minutes, or until the onions have softened. Meanwhile, beat the milk and flour together in a bowl.
Pour the mixture into the pan and leave the milk to boil on a low heat.
Then add the gouda, mozzarella and as much salt as you like. Everything is mixed, until the cheese sauce becomes smooth.
The blanched cauliflower is placed in a baking pan and poured with the prepared sauce. Sprinkle the fried bacon on top.
The cauliflower dish is placed in a preheated oven at 390°F (200°C) and baked for about 30 minutes.
When the cauliflower casserole is ready, sprinkle it with the chopped chives.
