How to make
Heat the oven to 360°F (180°C) with the fan on.
Put the roasted pumpkin in the blender to puree it.
Beat the eggs, sugar and honey in a bowl.
Add the oil and pumpkin puree, mix and add the dry ingredients.
A thick mixture should be obtained. Place small scoops from it onto baking paper with a spoon.
Bake the cookies, until they aquire a golden crust.
The Soft Pumpkin Cookies are ready.
