"If you have leftover carrots in the fridge, but you cant find them, heres this easy and very quick recipe for carrot cookies"

Ingredients

  • carrots - 1 pc. (80 g cleaned)
  • flour - 3.5 oz (100 g)
  • powdered sugar - 3.2 oz (90 g)
  • nutmeg - 1 pinch
  • oil - 1 2/3 tbsp (25 ml)
  • butter - 1.1 oz (30 g) hard, cold
  • orange peel - 1 tbsp.
  • flour - 3.5 oz (100 g)
  • baking powder - 1/2 tsp.
  • walnuts - 3 pcs. (halves)
  • salt - 1 small pinch

How to make

In a bowl, mix the flour, powdered brown sugar, baking powder, nutmeg and a pinch of salt. Add the butter and rub with your fingers, until it is absorbed by the dry mixture and slightly moistened.

Grate the carrots on a fine grater, mix with oil and the orange peel. Add thatto the dry mixture and mix with a wooden spoon, until a homogeneous mixture is obtained.

Take small portions of the dough with a spoon and place them at a distance in a tray covered with baking paper. Form round cookies, not too thin and without having to be perfectly smooth.

Stick a small piece of walnut in the middle of each cookie.

Bake them at 360°F (180 degrees) in a preheated oven for 12-15 minutes or until the cookies are slightly browned.

Leave the soft carrot cookies to cool and serve them with a cup of milk, tea or coffee. They are also suitable for decorating and accompanying a ball of vanilla ice cream.

To keep them soft, store them in a clean bag.

If you have made them thin, they may become crunchy after they have cooled down, so either make them thicker or close them in a box while they are still slightly warm.
