How to make
The carrots are washed and placed in the chopper. The goal is to break them down into small pieces, but not puree them. Beat the brown sugar with the olive oil.
Gradually, add the flour, baking powder, beaten egg and the carrot pieces to this mixture. If the resulting mixture seems too dry, add a little bit of water.
Mix and knead a thick dough. Break off pieces of the dough and form the chunky cookies and place them onto baking paper in a baking tray.
Bake at 360°F (180 degrees) for about 15-20 minutes.
