How to make
These lemon cookies with ricotta and chocolate chips are very easy and quick to make. Do not knead, but mix everything with a spoon or spatula.
Combine the ricotta, sugar, pinch of salt, vanilla, lemon peel, lemon juice in a bowl and mix.
Add the 2 eggs.
Sift the flour with the baking powder and add them as well.
Finally, cut the chocolate into small pieces and mix everything.
Line a tray with baking paper and shape the cookies with lightly greased hands and place them spaced apart on the tray.
Finally, sprinkle with a little granulated sugar and bake in a preheated oven at 360°F (180°C) for about 20-25 minutes, until they are lightly baked.
The baking time depends on the size of the cookies.
From this quantity I made 16 delicious lemon cookies.
