"Great silky pancakes to surprise the family during the holidays with"

Ingredients

  • spelt - 4.6 oz (130 g)
  • eggs - 2 pcs.
  • milk - 4/5 cup (200 - 220 ml)
  • oil - 1 2/3 tbsp (25 ml) + for baking the pancakes
  • salt - 1 pinch
  • sugar - 1 generous pinch
  • butter - for spreading the finished pancakes
  • jam - for serving (or honey, cheese, optional)

How to make

I use whole spelt grains, which I grind in a blender into a fine flour. Ready-made spelt flour can also be used.

Beat the eggs with a pinch of salt and sugar. Add the milk and oil and then the flour.

Stir, until a smooth and homogeneous mixture is obtained. Add more flour or more milk, if needed.

Bake the pancakes in an greased non-stick pan and as soon as you take them out, spread them liberally with butter and cover them with foil, in order to keep them soft.

Serve them while they're still warm. Both sweet and savory fillings are suitable for them.
