How to make
Leave the eggs at room temperature. Also leave the butter to soften. Put the eggs and sugar in a bowl and beat them with the mixer.
Add the baking powder to the yogurt and mix very well. When it activates, put the yogurt in the bowl and beat it.
Add the oil to the products and beat again. Sift the flour with a sieve and add the flour in portions in the bowl and mix.
Grease 12 muffin molds and sprinkle them well with flour. Pour the mixture evenly with a spoon. Grab the blueberries and arrange 7-9 pcs. on the mixture.
Sprinkle them with coconut flakes on top. Bake them in a preheated oven at 360°F (180°C), until they're fully baked. I baked them for 23 minutes.
During baking, some of the blueberries fall inside, others remain on top and release a little of their juice. Tasty, colorful and aromatic. They have a slightly sweet and slightly sour taste. Enjoy!
