How to make
Prepare silicone molds or others, which have a cylindrical shape - they can be smooth or embossed in the shape of Christmas ornaments.Heat up the oven to 360°F (180°C).
Beat the egg with the sugar into a fluffy cream. Add the oil, sour cream and goat cheese and continue beating.
Sift the flour with the baking powder in parts directly into the mixture, by stirring gently with a spoon, until a homogeneous smooth sponge cake batter is obtained. Finally add the blueberries. If they are fresh, roll them lightly in flour, otherwise put them directly into the mixture and mix gently.
Distribute the mixture in the molds without filling them to the top. About 10-11 standard muffin sized pieces are obtained. Place them in the preheated oven and bake them for 20-25 minutes. Meanwhile, mix the cream cheese and powdered sugar for the filling.
As soon as they cool, take out the finished muffins and cut their tops - crosswise or lengthwise - it depends on your molds. Try to keep the cylindrical shape.
Scoop out a bit from the inside of the thicker part and fill it with the cream, then stick the top back on.
Sprinkle with powdered sugar and decorate them as you like.
Enjoy!
