How to make
Grind the dry bread and 3.5 oz (100 g) of the cheddar cheese in a blender. It is best to use from the orange variety, which is mature.
Grate the remaining 7 oz (200 g) of cheddar.
Heat the butter and olive oil over low to moderate heat. The flour is fried in them while constantly stirring.
Pour the milk, then the water and mix well again, so that there are no lumps of flour.
Add the macaroni, salt, black pepper and nutmeg and boil for 8-10 minutes, depending on the type and size. They should remain al dente and the sauce should thicken.
Add the grated cheddar and mustard and mix well.
Pour everything into a baking pan, sprinkle generously with the grinded cheddar and bread and put it in the oven, which is heated to 390°F (200°C) for another 10 minutes, or until the oven-baked macaroni aquires a golden brown color.
