How to make

Finely chop the onion and the peppers into larger cubes. Cut the chicken fillet into juliennes or pieces to your liking.

Heat the fat over moderate heat and fry the vegetables with a little salt, until they have softened and have aquired brown color. Add the chicken and cook for 3-4 minutes, by stirring occasionally.

During this time, mix the water, vinegar, tomato puree, sugar, salt and all the spices in a container and dissolve the starch in the resulting mixture. Pour the mixture over the chicken and stir for about 5 minutes, then if you wish, you can adjust the taste by adding more spicy spices or other spices that you want to predominate. Maintain the temperature of the finished filling for the fajitas, on the lowest setting of the stove and get started with the tortillas.

Heat a pan the diameter of the tortillas and toast each one on both sides briefly. After removing each wrap from the heat, cover it with a clean towel, so that it does not cool down and above all, does not dry out.

Place a few spoonfuls of the Tex Mex flavored filling in the center of each tortilla and roll them up. Sprinkle with cheese, Cheddar or Gouda.

If you wish, you can serve these fajitas in wide cups wrapped with a napkin - they would be more beautiful and effective.

Sprinkle with freshly chopped parsley and serve them warm with jalapeños, guacamole or Mexican cheese sauce on top.

Enjoy your meal!
