How to make
Rice flour does not contain gluten, making it ideal for people who are intolerant or allergic to this protein.
The cookies that I have here for you are very easy and quick to make. In addition to molds, you can use a piping bag.
In a bowl, mix all of the ingredients and knead a soft dough. At first it is very crumbly, but it gradually homogenizes.
Form the kneaded dough into a ball, wrap in a piece of cling film and put it in the refrigerator for at least 2 hours. The colder it is, the better it is to work with.
Roll out the cooled dough into a 3-4 mm crust, onto a surface sprinkled with rice flour. Cut out the cookies with molds and arrange them on a tray lined with baking paper. They don't need to be at a distance.
They do not puff up when baking. Bake at 360°F (180°C) in a preheated oven with a fan for 8-10 minutes. Cool the cookies on a wire rack. Sprinkle them with powdered sugar.
