  • onion - 1 onion
  • garlic - 3 cloves
  • peppers - 1 pc.

  • mushrooms - 9 oz (250 g)
  • tomatoes - 1 pc.
  • oil - 5 tbsp.
  • bulgur - 1 cup
  • black pepper - 1/4 tsp.
  • cumin - 1 pinch
  • salt

How to make

The onion and pepper are cleaned and cut into small pieces. They are put in a pot with a little oil and are stewed. When they soften, add the cleaned and chopped mushrooms. Stir the vegetables periodically.

As soon as the mushrooms soften, add the finely chopped or crushed garlic cloves and the grated tomato. Cook it like this for about ten minutes, or until the water from the tomato evaporates, then add the bulgur.

After a short stirring, pour 1 cup of of vegetable broth into the pot, add as much salt as you like, black pepper, cumin and the leaves of two or three stalks of fresh thyme.

Leave it to boil for about ten minutes, then turn off the stove and cover the pot with a lid. The lid is not removed, but is left like that for half an hour, during which the bulgur will absorb the liquid and swell.

The cooked pilaf with bulgur is served sprinkled with fresh parsley.
