For this recipe the chicken can be boiled or baked. Cut it into small pieces. Pour a cup of olive oil into a deep pan.
Add the chopped onion, washed rice, blanched spinach and olives. Season with grated mint, black pepper and salt. Pour the chicken broth.
Cover the pot and cook, until the rice remains in fat. Stir occasionally with a spoon, so that the rice does not settle to the bottom.
Although not fried, the chicken with rice, spinach and olives recipe is very tasty.
