Ingredients

  • beef - 400 g (with bone)
  • carrots - 2 pcs.
  • onion - 1 onion
  • celery - 1 stalk
  • potatoes - 2 pcs.
  • noodles - a handful
  • taro - a pinch
  • parsley - a pinch
  • flour - 1 tbsp.
  • egg yolks - 1 pc.
  • yogurt - 3 tbsp.
  • black pepper
  • salt
  • lemon juice

How to make

Place the piece of beef in the pot. Pour water and put the pot on the stove. Before the soup boils, remove the foam.

Add the carrots (coarsely chopped), the onion (chopped), the peeled whole potatoes and a stalk of celery.

Boil, until the vegetables soften. Remove them with a slotted spoon and leave the meat to boil, until it separates from the bone. Remove the cooked meat from the broth and cut it into small pieces along with the vegetables.

Place everything back into the broth. Mix 1 tablespoon of flour with a little of the broth and pour it into the soup. Add a pinch of taro and parsley.

Add a handful of noodles and cook, until it's done. Remove the pot of beef soup from the heat.

In a bowl, beat 1 egg yolk with 3 tablespoons of yogurt with a wire whisk. Pour the thickener into the soup and stir.

Season the homemade beef soup with a pinch of black pepper and a few drops of lemon juice.
