How to make
Wash the potatoes well, put them in a pot, add 1 tsp. of sea salt and cover them with cold water. Boil them, until they soften.
It is best when you boil the potatoes, that they are not peeled. This way, they do not absorb much water, but remain soft and retain their taste.
Peel the potatoes after they have cooled and cut them into small pieces.
Add salt, if needed, drizzle with a few tablespoons of olive oil and mix.
Roast the pepper, peel it and cut it into small pieces. Add it to the potatoes.
Strain the canned tuna and add it to the appetizing potato salad.
Pour the juice of one lemon, season with a pinch of black pepper and a little more olive oil.
This Italian Potato Salad can be served as a light lunch or dinner.
