How to make
Put the gelatin to hydrate in cold water for 3-4 minutes or according to the manufacturer's instructions.
During this time caramelize the sugar with a little cream, until you get a light milky caramel.
Pour it into two aluminum crème caramel or panna cotta molds. It is important, that the caramel is soft and more liquid and to not harden - that's why we put the cream on it.
Heat the milk with the cream and caramel candy, while stirring constantly, until the candy melts. The heat should not exceed 190°F (90°C).
Once you have a homogeneous milk-caramel mixture, pull it away from the heat and add the gelatin (well strained). Stir.
Spread the mixture in the two molds over the caramel and after the creams have cooled, store them in the refrigerator to set (at least 3-4 hours).
To serve, run a sharp knife around the edges of the panna cotta and turn it over onto plates. Decorate it to your liking.
