Ingredients

  • beans - 1.1 lb (500 g)
  • onion - 1 onion
  • carrots - 1 pc.
  • roasted red peppers - 4 pcs.
  • olive oil - 4 tbsp. (or oil)
  • universal vegetable seasoning - 1 tsp.
  • salt - by taste

How to make

Put water over the heat to boil. Wash the beans and put them in the boiling water. Boil for about 45 minutes, then discard the first water.

Pour warm water and boil it again, by adding the chopped onion and carrot. Boil for about 45 minutes, until they're fully cooked.

Strain the beans from the water, blend them or mash them with a fork. Add the vegetable seasoning, oil and as much salt as you like.

Mix well and serve it in bowls. Cut the roasted peppers into strips and season them with olive oil and as much salt as you like.

Arrange them on top of the puree.

The dish can be served as an appetizer, side dish with grilled meat or fish, or on toast.

The bean puree with roasted peppers is ready.
