I use this dough to make keto bread, pretzels, and other things.

Today I made keto crackers. They are for my son who is starting a summer English course. Since he lost weight, he built his own diet. He has lunch at 11 and dinner at 6. I always make him homemade food for school.

Grate the mozzarella and melt the cream cheese in a water bath or microwave them for 2 minutes. Take them out and mix them with a spatula. Add the egg and mix, until a homogeneous mixture is obtained. Then add the flour and baking powder. You can also add different spices according to your taste.

Knead the dough, wrap it in foil and leave it in the fridge for 30 minutes. Then you can tear off the dough, shape the crackers and put them in a tray covered with baking paper or a silicone mat.

I measure the whole dough and divide it by 24. In this case, each piece was 0.6 oz (18 g). I cut off the dough and formed a worm like strip with my hands. Then I pressed it with my fingers and it turns out what you see in the photo. Of course, you can shape it your own way.

Bake the crackers at 360°F (180°C) in a preheated oven. They are done pretty fast, so keep an eye on them. My oven is gas, it bakes differently and that's why I turn them over.
