How to make
Cut and discard the tough spinach stems and browned leaves. Wash the spinach thoroughly in cold water and strain it well.
Heat the olive oil and butter in a frying pan over medium heat. Add the spinach, nutmeg, salt and black pepper.
Spread out the spinach leaves, in order to coat them with olive oil. Cover them with a lid and leave them to stew on medium-high heat for about 2-3 minutes, or until the spinach leaves have softened. Remove them from heat and serve.
The Spinach Garnish can complement lamb skewers with lemon and thyme or grilled chicken breasts with mustard.
