How to make
Cut the defrosted and washed cornish hen into portions and place it in a deep pot. Pour the water, add salt, peppercorns, allspice, bay leaf and put it on the stove to boil with a lid.
I used a pressure cooker, so that the hen is boiled and stewed at the same time with less water.
Once it has started boiling, leave it to boil on the stove for another 40-50 minutes, depending on the cookware you use.
During this time, wash, clean and peel the vegetables. Cut the potatoes, carrots and celery into large pieces. Add them to the hen while it's cooking.
Once the cornish hen stew is fully cooked, add additional salt, if needed.
Serve it in suitable plates, sprinkle with chopped parsley, cayenne pepper and serve it with a slice of lemon.
The clear cornish hen stew is very tasty.
