How to make
Beat the eggs well by hand or with a mixer/food processor.
Add the cottage cheese (ricotta/cream cheese) to them and mix very well, until you get a homogeneous keto bread mixture. This step is very easy when using a food processor, blender, chopper, Nutribullet, etc. It's literally done in seconds.
Mix the coconut flour with the baking powder and add it to the egg and cottage cheese mixture. Stir again, until the flour has completely absorbed the liquid.
Cover the bottom of a small baking pan with baking paper and pour the dietary bread mixture into it. Spread it out evenly and bake for about 30 minutes at 180°C (no fan) or until it's ready and nicely browned. The readiness is checked in the usual way - with a wooden skewer or toothpick.
The bread is removed from the oven, left to cool, cut into two halves and garnished with a filling of choice. In the picture it is with ham, cheese and mixed herbs with salt. It can be eaten as is or grilled on a party grill.
Note: The flavor of the coconut flour is distinct, so keep in mind, that the bread is slightly sweet.
This is keto bread for sandwiches, but it can also be eaten on its own with yogurt or with a main course.
