Ingredients

  • fresh okra - 1.1 lb (500 g)
  • onion - 2 medium - sized onions (yellow)
  • tomatoes - 3 pcs. (well ripened, fleshy)
  • olive oil - 4 tbsp.
  • vinegar - 3 tbsp.
  • salt - 1 tsp.
  • black pepper - 1/2 tsp.
  • sugar - 1 level top tsp.
  • finely chopped parsley

How to make

The okra is washed. Cut the stem along with part of the okra head.

In a bowl pour 1 tbsp. of salt, 3 tbsp. of vinegar and stir. Dip the cut part along with the head of the okra in the mixture and then pour them into the pot (okra only).

Cut the onions into slices and add them into the pot.

Cut the tomatoes in halves, grate them on a grater and pour them over the okra.

Pour olive oil, 100 ml of water and a level top teaspoon of sugar.

Place it on a moderate heat to boil for 15 minutes. Start timing after it boils. Cook, until it's ready. Add salt and black pepper.

The okra should not be boiled, but should remain in whole pieces. If necessary, a little more water can be added and it is best to have a sauce with the Delicious Greek-Style Okra Stew.

When serving, the stew is sprinkled with chopped parsley.
