How to make

The wild strawberry fruit are extremely tasty and fragrant and are also used in folk medicine, rather their leaves for the preparation of various types of decoctions.

I got 4.4 lb (2 kg) of gorgeous wild strawberries as a gift and I decided to use them to make jam, because the wild strawberry spoils in hours and it needs to be prepared quickly, either as jam or syrup.

I dipped the fruit in a large pot of cold water and dipped them with my hands, because they are very tender and to not damage them, so that small sticks fall and to clean them. I performed this procedure several times, by changing the water. Then I strained them well and transferred them into a deep pot.

I added the sugar, I don't use a lot of sugar when I make jam, this amount for 2.2 lb (1 kg) is enough, a little butter and a little water and I put it on a medium heat, until the mixture boils. The butter is added as it significantly reduces the formation of foam.

I lowered the heat and let the jam boil on low heat, for about 50 minutes or to the desired consistency of the syrup.

Remove the pot from the heat, add the citric acid and stir.

The finished jam is distributed in dry and hot jars, which are inverted to vacuum seal the lid.

The wild strawberry jam is ready.
