How to make
Finely chop the onion and stew it with a little fat and water directly in the baking pan.
Add the diced zucchini and sliced mushrooms to the stewed onion.
Then add the sliced potatoes, rice and quinoa.
Stir the dish periodically, sprinkle it with salt and black pepper. Finally, add a blended tomato and finely chopped dill.
Add three cups of warm water and bake the rice at 360°F (180°C).
The oven roasted zucchini with rice and quinoa are delicious!
