How to make
Cook the potatoes in salted water. Allow to cool, skin and mash them. Season with salt, add the eggs, butter and warm milk. Stir to achieve a relatively fine puree.
Clean the mushrooms and onions and slice them. Saute in hot oil and butter. Season with salt and black pepper, to taste.
Shape the potatoes with a pipping bag, or a spoon, starting from the bottom and gradually forming the sides.
Fill the shaped nests with the mushroom and onion stuffing, and sprinkle with grated cheese. Preheat the oven to 360°F (180°C) and bake for about 20 minutes.
Serve with a salad of your preference.
