How to make
Cut the bacon and sausage into pieces.
Also cut the peppers and onions into pieces.
In a Teflon pan drop a drop of fat and fry the bacon.
Add the pepper and corn and fry for 3-4 minutes. Add the chopped sausage, spring onions and spices of your choice.
Mix well and add the grated emmental (you can replace it with yellow cheese).
Once the emmental has melted, add the stuffing to the buttered tortilla wraps and add the salsa sauce.
Roll up the enchiladas and bake them in the pan.
Serve the enchiladas with rich stuffing warm.
