Leave the ice cream to melt and add the flour to it.
Stir only with a spoon, no need to beat with a mixer. When the mixture is homogeneous, add the colored sprinkles and stir gently.
Pour half of the mixture into silicone cupcake tins and bake the cupcakes in a preheated oven, until they're ready.
