Ingredients

  • berries mix - 10.5 oz (300 g)
  • gelatin - 5 sheets (2 grams each)
  • water - 4 tbsp (60 ml) + for soaking the gelatin
  • sugar - 7 oz (200 g)
  • cream - 9 oz (250 g) min. 30% fat
  • vanilla essence - 4 drops
  • cheese - 9 oz (250 g) ricotta, quark, requeson or cottage cheese

How to make

Put the gelatin sheets to hydrate in cold water for the time indicated on the package.

Slightly heat 4 tbsp (60 ml) of water and dissolve the hydrated gelatin in it. Stir well.

Without wasting time, so that the gelatin does not harden again, add the cheese (if you do not have any of the cheeses listed in the products, you can use cream cheese) sugar and 9 oz (250 g) of berries (eg blueberries, raspberries, blackberries, wild strawberries) and save the remaining to decorate the mousse.

Stir, so that the gelatin spreads everywhere and transfer it quickly into a blender. Blend the mixture, until it becomes smooth.

In case there are blackberries with the berries, you can prepare them in advance by blending and straining them to remove the seeds.

Put the finished fruit mixture into a large bowl and refrigerate it for about 30 minutes or until it starts to thicken and acquire the consistency of whipped cream. In no case should you wait for it to harden completely.

Whip the cream with the vanilla essence into a fluffy cream. Be careful here too, because confectionery cream should not be beaten for a long time, since it lumps up.

Add the whipped vanilla cream to the fruit mixture from the fridge and mix gently with smooth movements with a spatula.

Distribute the fruit mousse into cups and refrigerate it for 4 hours.

Before serving the vanilla berry mousse well chilled, garnish it with the berries, which you set aside.
