Blend the breadcrumbs and oatmeal in a blender. Add the cottage cheese and milk, then the cinnamon, baking powder and vanilla. Finally, add the coconut oil.
Beat the yolks in a blender and beat the egg whites into a white mixture, by using a mixer. About 5 protein pancakes will be obtained from the mixture. If you want them to be thinner, you can add more milk.
Stir well and add to the egg whites. Grease a pancake pan with oil and pour the mixture in it. Bake the oatmeal pancakes on both sides.
Serve the pancakes with cottage cheese and oatmeal with your favorite jam.
