Ingredients

  • cherry tomatoes - 5.3 oz (150 g)
  • pesto - 3 tbsp. (basil, mint, of choice)
  • capers - 2 tbsp.
  • olive oil - 3 tbsp.
  • salmon fillet - 1.1 lb (500 g)
  • butter - 2 tbsp.
  • white wine - 2/3 cup (150 ml)
  • lemons - 1 pc. (juice and decoration)
  • mushrooms - 3.5 oz (100 g)

How to make

Cut the fish into pieces with a kitchen knife and place it in a lightly greased baking pan.

Pour the white wine and lemon juice over it and leave it like that to marinate.

Then smear the top well with pesto, so that it is covered well everywhere.

Sprinkle it with capers and put the halves of cherry tomatoes between the pieces.

Optionally, you can add chopped mushrooms.

Drizzle the dish with olive oil and place it in the oven at 390°F (200°C) for about 20 minutes.

When serving, garnish the roasted fish with more lemon slices.

The salmon with pesto and cherry tomatoes is very tasty.
