How to make
Wash the watercress salad leaves, lollo rosso and verde and leave them to drain well.
Put them in a bowl with the tomatoes, nuts and sliced avocado.
Prepare a classic dressing of olive oil, balsamic vinegar and salt and season the salad, by stirring it lightly, so that you don't to crush the fragile leaves.
Caramelize the sugar, while being careful not to burn it. It is enough to liquefy and begin to darken slightly and add a slice of goat cheese. When it is browned and aquires an appetizing color, turn it to the other side briefly.
Put the cheese in the middle of the salad, drizzle it with raspberry balsamic reduction and serve it, while the goat cheese is still warm.
