How to make
Dissolve the yeast in slightly warmed water with a pinch of sugar. Leave it to activate for 5 minutes.
For this recipe we will need Parmesan powder, so if yours is a whole block, just grate it on a very fine grater or in the best case - grind in a coffee grinder or blender.
Put both types of flour in a bowl and add olive oil and the activated yeast. Add salt, 2.1 oz (60 g) of parmesan powder and knead a smooth dough.
Put the dough in a bag and close it tightly. Refrigerate it for 40 minutes.
When this time has passed, roll it out into a thin crust and cut thin long strips from the dough.
Twist each one and arrange them at a short distance from each other in a tray, which has been greased or covered with baking paper.
Sprinkle them with remaining parmesan. Since it will fall into the tray when sprinkling, if you use baking paper, there won't be problem, but if you just grease its surface, the parmesan can burn and be difficult to clean afterwards. Therefore, in this case, sprinkle the parmesan as soon as you roll out the crust and go over it with a rolling pin, so that it can stick well to the dough. Then just cut the strips.
Bake the cracker bites in a preheated oven at 390°F (200°C) for exactly 15 minutes.
