Crush the chocolate into pieces, add the butter and melt it in a water bath.

Grab the cooking cream and pour it into a bowl with high walls.
It is important to get it out of the fridge just before you start beating it.
Start whipping the cream with a mixer at maximum speed.
At the third minute, stop and add the melted chocolate. Continue beating for another five minutes. The chocolate whipped cream is ready.
